Sick days won't roll over, generally speaking. You might be able to get something in writing, but unlikely.  (If you do, have it amended into the actual contract, and stamped by your co-teacher, vice principal, and principal) Even then, it may be risky.  Staff often changes over the winter break.  Why would a new vice principal or principal honor something their predecessor agreed to? (He or she might, but I wouldn't count on it)

Your school might let you take half days--work from 1-5 for two weeks.  I did that last year and it was quite nice.

Vacation dates usually aren't rolled over. You should use them before your contract expires. You might miss out if you don't. If you can pull off half days, do that too.

Sick days won't roll over.  Vacation days generally don't, but if your school allows it then at least get it in writing (and bear in mind there is no point in keeping them if the school won't/can't re-sign you).  Finally, if you re-sign you should get the number of bonus days stipulated in the current contract (which you signed), not the new contract (which you haven't yet signed).

if you can get a written guarantee from your school then vacation days definitely can carry over.
