My mother used to bake a lot and she made what she called a boiled icing for her cakes. It turned out hard and crispy on top and soft and gooey inside.

Does anyone know of this evil magic? I'd love to find the recipe.

Not a problem buying it, just the local supermarkets where I live don't carry it, and I was thinking about a baking day tomorrow. We always order from Coupang but It'll arrive on Monday........and I'm deleting the sugar and hitting the good stuff (not rye) from Monday, I'm a bit chubby from 6 weeks of crap eating.

I see. Well, I guess you can use baking powder but then your cookies won't have that tangy taste that makes them Snickerdoodles. They'll just be... cinnamon cookies.

No sweat. I'll have a look around some of the foreign food shops. There's 2 or 3 within walking distance. Probably have some luck in one of those. If not, I'll wait a bit. Cheers Billy!

Kimjang day today...I won't bore you with the details but it was the quickest, easiest, and least stressful ever. Apart from a bit of prep yesterday, it took a grand total of one afternoon to complete. We even went to the city this morning. Sure beats the usual 2 days of salting, cutting, and cleaning. Even better, I got out of it  :smiley:

To bring this back to family recipes, my wife has a very large book that she has put together over the years with all her recipes...including sauces like the one she used today for our kimchi. Some wonderful stuff inside, if you are into homestyle Korean food and recipes.

Thanks folks, I'll take a look. Was just wondering if anyone had the recipe.

As to the meringue thing, it's similar I guess. Sort of a same same but diffelent thing LOL
