The only thing better today than airing out the classroom after the kindy boy pooped his pants and Florida Man digitally posing as Billy Herrington is my adult class' plan to treat me to samgyetang this Wednesday for "Thanksgiving", the women debating what brand of soju to bring to the academy.

EDIT: The weather forecast for Wednesday is only 24 c, down from 29 today and 28 tomorrow, not again in the 10-day forecast. The sweet 20 c warm not hot days of fall are almost upon us.

Ah, dirty dogs and smelly hippos! It's a burden in life. Sitting on a beach never helps but it does for Hardy (not the other one though)

You miss Billy, don't you?  I think we will all remember that time Billy was mocking you but it went over your head and you wished he was a woman and tearfully offered him a place to sleep anytime he came to Korea.  I think we all miss Billy.  He was fun.  Now, that Toiling Ajumma was another story...

By the way, since you're big on correcting everyone's grammar, what is adult " class' ?"

For real! Billy was good fun but he also posted some stuff that was interesting. I'm surprised that he hasn't slipped back in.

I've just finished what can only be described as a 'magnificent' tasting soup...'Fall Soup"

Here's the recipe that I pulled out of my arse...

A large handful (give or take) of:

# diced carrot
# diced pumpkin
# diced sweet potato
# diced celery
# thinly diced cabbage
# A couple of Korean leeks with thinly sliced greens
# black beans
# painted pony beans (the red on white ones)

# one small chicken for stock
# half a can of Campbells concentrated tomato soup
# macaroni

Method

1. Cover chicken with water and simmer for 30 minutes. Add a liberal sprinkling of salt, mixed herbs, and garlic.
2. Once water starts boiling add the beans.
3. Add vegetables and soup after 30 minutes, and simmer for another hour to an hour and a half.
3. Remove chicken
4. keep simmering for a bit longer

The chicken can be shredded and put back into the soup if you want. Personally, I put the chicken aside for a pie.

Anyway, I have divided this into three meals. I add about 40 grams of macaroni when boil each serving.

This soup as a vegetable soup was thick, a little sweet, and extremely hearty with a mild pumpkin taste in the background.  Maybe my new fall favorite before winter hits and minestrone kicks in.

Thanks for the share Jethro!

Not a big pumpkin and sweet potato fan generally (except for pumpkin/sweet potato pie), but I might have to try something like that with maybe some sort of zucchini or whatnot. Korean radish might work as well. Hmm....decisions decisions
