E2 Visa documents - expiration?

Hi I'm from the U.S. and preparing my E2 documents (for the 3rd time in 5 years haha). I know the FBI criminal background check results expire after 6 months.

My question is, do apostilles expire? I had my university degree notarized and apostilled by the state in 2015. I had 2 copies done because I was paranoid. I ended up using one in 2017 without any issues, even though it was 2 years old at this time. Now I have the 2nd one which I might try to use for this time around. Do you think Korean immigration would have any issue with the authentication being 5 years old? It looks just fine!

I was hoping to get a new one to be safe, but it'll be 10 times more difficult because of COVID closings. If anybody has ideas, feel free to share! Thank you!
