What kind of fish do you order at Korean fish markets?

 I am going to Busan. I know it's really hard to find Salmon or Tuna in the fish market. When you order 회 What kind of fish do you order. I noticed they started selling really nice salmon in the Seoul market.

Most Koreans order 광어 or 우럭 , the staple fish to eat for 회 .
Those who opt to get a more expensive fish order 참돔 , or a type of 돔 .

I get trout usually or octopus.

Fishing for trout in the mountains is a great past time in Korea. Every winter I ice fish for a weekend and it's a good experience to meet local people who are generally kind and friendly.

Not mackerel.

In Canada we used to get Atlantic mackerel, but in Korea the restaurants make such tasty mackerel dishes that I wouldn't bother.

I've bought salmon several times from E-mart.

The only seafood I've bought from fish markets (outside, including 5-day markets) is mussels. And that's because I can't find a spicy mussel soup restaurant in the most recent town I'm in and I miss it.

I never really understood the whole idea of Korean modem Hoe. Why order a cambination when they all end up tasting the same?  At least go to Noryangin market and get the combo platter with the farmed Salmon from Norway. At least then there is some variation in flavour between the different fish.
